Preheat oven to 170 degrees Celcius.
Add 2tbls of olive oil to a non-stick frying pan or griddle.
Preheat until very hot, almost smoking.
Season the steak heavily with sea salt and black pepper.
Place the steak into the pan, being very careful not to splash the hot oil.
Leave without touching for 1 minute. Then turn and leave for 1 minute on the other side.
Transfer to the oven to finish for 7 minutes for medium ( adjust for required 'doneness').
Wrap in in foil and leave to rest for 10-15 mins to allow the meat to relax and become extra tender!
